Recipes for the perpetually harassed..

Hi Caroline

 

How about some recipes which are quick and easy to do on a workday evening that are going to make me look like a cross between Jamie Oliver and Delia Smith with the minimum of effort and maximum taste?  I like things that I can put in the oven in one pot while I linger over a glass of vino and avoid too much washing up.  I have one or two favourites but am running out of sneaky ideas!

Hi Anna

The only one-pot recipe I use is beef ragout. It's best to use a slow cooker. All you do is to dice some braising steak, chop up some red and green peppers, an onion, some mushrooms, carrots, a couple of tomatoes and a stick or two of celery and put in the cooker with a stock cube (either home-made or shop bought). Add enough water to cover the beef and veg and about a dessert spoon of cornflour, which you stirr in, to thicken the sauce. You can add a squirt of tomato puree if you wish. Season with salt and pepper and a teaspoon or two of mixed herbs. On the slowest setting you cook for about eight hours, stirring occasionally. I don't cook this in the oven, but I guess it would take around an hour at normal temperature. You can serve with jacket potatoes which you could also put in the oven, or salad and crusty bread. Hope you like it.
